Vin Santo, typical product of the oenological Tuscan tradition, based on trebbiano and malvasia, has legendary origins. Vin santo is still produced collecting the best grapes in order to make them wilt on mats or hanging them on wooden stakes.
Few people know that this drying process awaiting the noble mould maturation takes place in attics and not in basements, as well as the “caratelli” ageing, little casks of 15-30 liters.
On regards of temperature variations this positioning in attics will determine vin santo maturation and it will establish the dry or the sweet outcome.
